Background: Quaternary ammonium compounds are chemical compounds that are very important active substances in the formulations of disinfectants. They are commonly used in the cleaning products, food industry, detergents, antiseptics, preservatives and disinfectants for instruments, surfaces, water as well as in textile. They have toxic effects on the aquatic organisms and can cause eye irritation and skin allergy and respiratory diseases such as asthma Aim: The purpose of this study is to determine some quaternary ammonium compounds in packaged food using high performance liquid chromatography (HPLC MS/MS). Methods: Twenty five samples of packaged food (Cerelac, Molokhia and Artichoke) were collected from the Egyptian markets to be analyzed using HPLC MS/MS. Results: All samples were safe and within the acceptable range however the fruits and wheat with milk cerelac contained the highest QACs compounds when compared with the other samples which may affect the babies health.
تحديد بعض المطهرات العضوية في بعض الأغذية المعلبة الخلفية: مركبات الأمونيوم الرباعية هي مركبات كيميائية تعتبر مواد فعالة للغاية في تركيبات المطهرات. تستخدم عادة في منتجات التنظيف ، صناعة المواد الغذائية ، المنظفات ، المطهرات ، المواد الحافظة والمطهرات للأدوات ، الأسطح ، الماء وكذلك في النسيج. تأثر هذه المركبات بالسلب على الكائنات المائية ويمكن أن تسبب تهيج العين والحساسية الجلدية وأمراض الجهاز التنفسي مثل الربو. الهدف: الغرض من هذه الدراسة هو تحديد بعض مركبات الأمونيوم الرباعية في الأغذية المعبأة باستخدام (HPLC MS / MS) . الطريقة: تم تجميع خمسة وعشرون عينة من الأغذية المعبأة (سيريلاك ، ملوخية ، خرشوف) من الأسواق المصرية لتحليلها باستخدام HPLC MS / MS. النتائج: كانت جميع العينات آمنة وضمن النطاق المقبول عالميا ، إلا أن سيريلاك الفواكه و القمح مع الحليب احتوع على أعلى مركبات الامونيم الرباعية بالمقارنة بباقي العينات و قد يأثر هذا على صحة الأطفال.
